A NOTE FROM MS. KIM…

“A Fallen leaf is nothing more than a summer’s wave goodbye.”

Fall is my favorite time of year.  The leaves crackling under foot, a snuggly blanket on a cool night, football games and pumpkin waffles for dinner.  I have been making pumpkin waffles for more than 25 years.  They smell wonderful and taste even better.  I hope that they will become a tradition at your home and that you will think of Compass Christian Preschool whenever you make them with your family.

What You Will Need:

2 Cups Flour                                                                ½ teaspoon salt

2 teaspoons baking powder                                       3 Eggs, beaten

¼ teaspoon ground cinnamon                                  1 ¾ Cups Milk

¼ teaspoon ground ginger                                         ¾ Cup Canned Pumpkin

¼ teaspoon ground nutmeg                                       ½ Cup Cooking Oil

 

  1. In a large bowl, mix together the flour baking powder, cinnamon, ginger, nutmeg and salt.
  2. In another bowl, mix the eggs, milk, pumpkin and cooking oil.
  3. Combine the egg mixture with the flour mixture, mix well.
  4. Cook the batter in a hot waffle iron.  Serve with butter, maple syrup or honey.
