Fall is my favorite time of year. The leaves crackling under foot, a snuggly blanket on a cool night, football games and pumpkin waffles for dinner. I have been making pumpkin waffles for more than 25 years. They smell wonderful and taste even better. I hope that they will become a tradition at your home and that you will think of Compass Christian Preschool whenever you make them with your family.

What You Will Need:
2 Cups Flour ½ teaspoon salt
2 teaspoons baking powder 3 Eggs, beaten
¼ teaspoon ground cinnamon 1 ¾ Cups Milk
¼ teaspoon ground ginger ¾ Cup Canned Pumpkin
¼ teaspoon ground nutmeg ½ Cup Cooking Oil
- In a large bowl, mix together the flour baking powder, cinnamon, ginger, nutmeg and salt.
- In another bowl, mix the eggs, milk, pumpkin and cooking oil.
- Combine the egg mixture with the flour mixture, mix well.
- Cook the batter in a hot waffle iron. Serve with butter, maple syrup or honey.
